Establishment is a vision brought to life by Merivale owner and CEO, Justin Hemmes, and while it may look stately, don’t be fooled; we know how to have a good time. It’s hard to believe it was once the burnt-out ruins of the old department store, George Patterson House.
Retaining many of its original grand 19th-century features, this impressive reincarnation is home to the iconic Establishment Bar, the prohibition-style bar Palmer & Co., hemmesphere, an opulent cocktail lounge, the intimate Tank Stream Bar and world-class restaurants – est., sushi e and Mr. Wong.
